Yam Fry Recipe aka Kalyana Veetu Senai curry with step by step pics and a short Youtube video. If you like my video, please share it and don’t forget to SUBSCRIBE to my channel. It is also called as Kalyana Veetu Senai Kizhangu as it takes a special place in Weddings in Tamilnadu. I suggest using fried bread in the recipe which adds a nice taste to the senai kilangu varuval and even a speciality of this dish. But, before trying any recipes with yam, ensure it is aged else it creates an itchy sensation in the tongue and throat. Yam Fry Recipe | Kalyana Veetu Senai Curry | Yam Curry

Yam Fry Recipe / Kalyana Veetu Senai Curry is also called as Kalyana Veetu Senai Kizhangu as it takes a special place in Weddings in Tamilnadu. This yam curry is a perfect pair with Okra Sambar, Tomato Kuzhambu and Sambar Sadham.

Equipment

  • Stovetop

Ingredients
  

1 Cup = 250 ML, 1 tsp = 5 ML

  • ¼ Kg Yam / Senaikizhangu / சேனை கிழங்கு
  • 2 Cups Water / தண்ணீர் To Boil
  • 1 Onion / பெரிய வெங்காயம்
  • 2 Tomato / தக்காளி
  • 1 tsp Ginger Garlic Paste / இஞ்சி பூண்டு விழுது
  • ½ tsp Turmeric Powder / மஞ்சள்தூள்
  • 3 tsp Chilli Powder / மிளகாய்த்தூள்
  • 1 tbsp Coriander Leaves / கொத்தமல்லி இலை
  • Salt / உப்பு As Required
  • 1 Slice Bread
  • Oil / எண்ணெய் For Deep Frying

To Grind

  • 3 tbsp Coconut / தேங்காய்
  • ½ tsp Fennel Seeds / சோம்பு
  • ½ Cup Water / தண்ணீர்

To Temper

  • 2 - 3 tbsp Oil / எண்ணெய்
  • ½ tsp Fennel Seeds / சோம்பு
  • 1 Bay Leaves / பிரிஞ்சியிலை
  • 1 Cinnamon / பட்டை
  • 2 Cloves / கிராம்பு
  • 2 Cardamom / ஏலக்காய்
  • 1 Sprig Curry Leaves / கருவேப்பில்லை

Instructions
 

  • First, measure and keep all the ingredients ready. Remove the skin of the yam and slice it into cubes. Then, rinse the yam thoroughly, until the water runs clear and ensure there is no mud. Also, slice the bread into cubes. (watch my Youtube video for easy understanding).
  • Chop the onion and tomato finely. Roll boil water in a pan, then add the chopped yam and little salt.
  • Now, add the turmeric powder and cook the yam (parboil only) not mushy. Drain the water from the yam.
  • Heat oil in a pan, add the yam in batches and fry it till crispy. In the same oil, fry the bread pieces.
  • Drain both the fried yam and bread pieces in a kitchen towel. Heat 2 tbsp of oil in a pan, then add the ingredients listed in the table 'To Temper'. Once nice smell wafts, add the onion and saute till translucent. Then add the ginger-garlic paste.
  • Now, add the tomato and saute till mushy. Then, add the fried yam and turmeric powder.
  • Add the chilli powder and required salt. Mix well and let it cook for 2 minutes. In a mixer, add the grated coconut, fennel seeds and grind it till smooth by pouring 1/2 cup of water.
  • Pour the ground coconut paste and mix well. Cook for another 2 minutes, till the yam and coconut paste, blends well.
  • Finally, add the fried bread pieces and sprinkle the coriander leaves.
    Try this Yam Curry with hot rice and mixed vegetable sambar.

Notes

Tips for Yam Fry Recipe

1. Don't use fresh yam (aged one) as it has more itching property.
2. When slicing yam, grease your hands with oil or lemon juice. This method helps to avoid itching and your hands wont get stained.
3. Always keep the sliced yam in water until use to avoid de-colouration.
4. Don't overcook the yam and make it mushy, it should be parboiled only.
5. Frying the yam in oil gives a hotel taste to the Yam Fry Recipe and reduces the itching sense too.
6. Adjust chilli powder as per spice level required for this Yam Curry.
7. Addition of fried bread pieces lends a nice taste to the Senai Kilangu Varuval. But add it last only, else it disintegrates while mixing.

Method for Kalyana Veetu Senai Curry
