First, measure and keep all the ingredients ready. I used desiccated coconut, if using freshly grated coconut, roast it well in gheetill all the moisture leaves, otherwise the shelf life reduces. Also, rose water can be replaced with 2 to 3 drops of rose essence.
Heat 1 tsp of gheein a pan and add the desiccated coconut. Then, roast it in low flame for 1 minute only, to get a nice aroma.
Now pour the condensed milk and mix well.
Simmer the flame completely and add the rose water.
Just add 2 drops of pink food colour (I used liquid food colour, you can replace it with 1 pinch of dry powdered food colour too).
Continue mixing until it leaves the sides of the pan and forms a mass.
On a plate, transfer about 2 to 3 tbsp of desiccated coconut( for rolling the ladoo) and keep aside.
Grease your hands with little gheeand pinch a small portion from the coconut mixture. Roll it into smooth balls.
Roll the ladoo gently over the desiccated coconut.
Do the same with all the ladoo's.

Tips for Rose Coconut Ladoo Recipe
If using freshly grated coconut, choose mature and thick ones. otherwise, the coconut turns like paste while sauteeing.
While using fresh coconut, scrap the white part only, so the laddu looks appetizing. Ensure to discard the brown part.
Also, saute the freshly grated coconut well until all the moisture leaves, else it gets spoiled easily. I used desiccated coconut, so skipped all these steps.
Don't change the colour of the coconut while roasting, otherwise, the ladoo smells bad.
I used Amul Mithai Mate for this Rose Coconut Laddu. Condensed milk can be replaced with 1/2 cup of milk and 1/4 cup of sugar.
Do not overcook or thicken the mixture or else the ladoo turn hard. Just mix till it forms a mass and leaves the sides of the pan.
For more flavour, 1/4 tsp of cardamom powder can be added to the coconut mixture.
Rosewater can be replaced with 2 drops of rose essence too.
Consume within 1 or 2 days or refrigerate and use within 7 days.
