Suji Ki Kheer Recipe / Rava Payasam Recipe with step by step pics and a short Youtube video. If you like my video, please share it and don’t forget to SUBSCRIBE to my channel. This is one of the simplest kheer recipes, prepared with the available ingredients in our kitchen pantry and made in no time in a wink when we have sudden guests in our home. Unlike, Kesari Recipes, not much ghee or stirring is required and it yields a lot in quantity too. I suggest using full-fat milk and if you want to make it soon, use fine sooji which gets cooked quickly. This kheer is a toddler food too, as it is easily digestible and they love the taste very much. Also, I wanted to start this New Year with a sweet note, so exactly scheduled the recipe to 12:01 AM, anyhow these are simple excitements in life, isn’t it!

Rava Payasam Recipe | Suji Ki Kheer Recipe

Suji Ki Kheer Recipe / Rava Payasam Recipe is one of the simplest kheer recipes, prepared with the available ingredients in our kitchen pantry and made in no time in a wink when we have sudden guests in our home. Unlike, Kesari Recipes, not much ghee or stirring is required and it yields a lot in quantity too.

Ingredients
  

  • ¼ Cup Sooji / Rava / ரவை
  • ½ Cup Sugar / சக்கரை
  • 2 Cups Milk / பால்
  • 1 Cup Water / தண்ணீர்
  • 1 tbsp Condensed Milk
  • 2 tsp Ghee / நெய் Link for Homemade Ghee
  • 10 Cashew / முந்திரி
  • 10 Raisins / உலர்ந்த திராட்சை
  • 3 Pods Cardamom / ஏலக்காய்

Instructions
 

  • First, measure and keep all the ingredients ready.
  • Heat 1 tsp of ghee in a pan, then add the cashew, raisins, cardamom pods and fry till golden colour. Keep aside in another plate.
  • To the same pan, pour 1 tsp of ghee and add the sooji/rava. Roast it for 4 to 5 minutes in low flame, until it changes in colour slightly and nice aroma wafts. Keep the roasted sooji separately in a plate.
  • To the same pan, pour 1/2 cup of milk and 1 cup of water. Let it roll boil for a few minutes and then add the sooji.
  • Mix well till all the water is absorbed and cover it with a lid, as it splutters too much. Cook in low flame for about 3 to 4 minutes till the sooji turns soft and ensure it is cooked, else it won't get cooked after adding sugar. The mixture would have thickened now.
  • Now add sugar in a sprinkled way, this method avoids lump formation. Sugar melts and the mixture starts to loosen. Then, pour the remaining 1 & 1/2 cups of milk.
  • Allow it to boil for 3 minutes in low flame and pour the condensed milk. Mix again, add the fried cashews, raisins, cardamom and boil for another 1 minute. Switch off the flame, when the payasam is watery itself as it thickens with time automatically. Before serving, dilute it with 1/2 cup of warm milk.

Notes

Tips for Suji Ki Kheer Recipe

1. Roasting sooji in ghee lends a wonderful flavour. It can be dry roasted also.
2. Also roast the sooji in low flame and don’t burn it, else the Rava Payasam Recipe tastes bitter.
3. For more creaminess, use full fat milk and skip the addition of water.
4. The most important tip is sooji should be cooked very well before adding sugar. Cooking time of the sooji is usually 3 to 4 minutes.
5. If sugar is added to the uncooked sooji, then the kheer becomes hard and it will be tough to cook the sooji again.
6. Also, add sugar slowly and in a sprinkled way which helps to avoid lumps.
7. Adjust sugar quantity as per sweetness preferred for this Suji Ki Kheer Recipe.
8. For more taste and creaminess, 1 or 2 tbsp of condensed milk can be added but its optional only.
9. Furthermore, few strands of saffron can be soaked in little warm milk and added at last for more flavour.
