It’s another quick version of Kadhamba Sambar but made with Sambar powder. This Mixed Vegetable Sambar recipe can be either be prepared with English vegetables or even country vegetables. But each vegetable adds a different flavour and taste to the Sambar. Let’s go to the recipe.

Mixed Vegetable Sambar

Easy Kadhamba Sambar | Mixed Vegetable Sambar Recipe
Equipment

Ingredients
- ½ Cup Toor Dal / துவரம்பருப்பு
- 7 to 8 Shallots / Small Onion / சின்ன வெங்காயம்
- 2 Tomato / தக்காளி
- 1 Cup Mixed Vegetables
- 1 Medium gooseberry sized Tamarind / புளி
- ¼ tsp Turmeric Powder / மஞ்சள்தூள்
- 4 tsp Sambar Powder / சாம்பார் தூள் Link for Sambar powder
- Salt / உப்பு As Needed
To Temper
- 1 tsp Mustard Seeds / கடுகு
- ½ tsp Urad Dal / உளுத்தம்பருப்பு
- ¼ tsp Methi Seeds / Fenugreek / வெந்தயம்
- ½ tsp Jeera / ஜீரகம்
- 1 Red Chilli / சிவப்பு மிளகாய்
- 2 Pinch Hing / பெருங்காயம்
- 1 Sprig Curry Leaves / கருவேப்பில்லை
- 2 tbsp Oil / Ghee / எண்ணெய்
Instructions
- Peel small onion, chop tomatoes and vegetables. Pressure cook dal for 5 whistles, mash it well. Soak tamarind in water and extract tamarind pulp. Keep it by side.
- Now heat kadai and temper the items given in the table 'To Temper'. Add small onion, tomatoes and mixed veggies one by one. Saute well until the raw smell of the veggies leaves.
- Now add dal water, tamarind water, turmeric powder, sambar powder and salt. Boil till the veggies get cooked, add mashed dal and mix well. Boil for a while and garnish with coriander leaves.
- Serve with hot steamed rice and any poriyal.
Notes
Tips for Kadhamba Sambar
1. I used carrot, beans, radish and capsicum. Veggies choice is purely optional for this Kadhamba Sambar.2. You can use country veggies (Nattu kaigari) like brinjal, drumstick, cluster beans, plantain, yellow pumpkin etc.
3. If you are adding okra, first saute okra in oil and then add to Mixed Vegetable Sambar.
Method for Mixed Vegetable Sambar Recipe
