Maa Ladoo is nothing but a sweet recipe prepared with fried gram/ roasted gram /chutney dal or pottukadalai in the Tamil language. It is a very simple and easy to prepare ladoo within 20 minutes, just with minimal ingredients apt for any festivals like Navratri and Diwali. Fried gram is a rich source of protein, so you can give this ladoo to your kids, without any guilt, they will also love it, as it tastes really yummy with a melt in the mouth texture. Maa Laddu Recipe

Equipment
- Stovetop
- Kadai / Pan
Ingredients
1 Cup = 250 ML, 1 tsp = 5 ML
- 1 Cup Fried Gram / Pottukadalai
- ¾ Cup Powdered Sugar
- 3 Pods Cardamom
- ¼ Cup Ghee
- 8 - 10 Cashews
Instructions
- First, measure and keep all the ingredients ready.
- In a pan, add the pottukadalai. Simmer the flame completely and dry roast it for 1 minute. Ensure not to change the colour or burn it, else the laddu won't taste good and looks appealing. This roasting step is optional but it lends a nice aroma.
- Once it cools down, transfer it to a dry mixer.
- Then, pulse it to a fine powder and keep it separately.
- To the same mixer, add the sugar and cardamom pods.
- Pulse it to a fine powder.
- Sift the pulsed pottukadalai powder once.
- Also, sift the powdered sugar.
- Heat ghee in a small pan and add the cashews. Then, fry till golden color.
- Then, add the cashews and ghee, (it should be warm, as it helps in binding the ladoo)
- Mix everything well without any lumps.
- Pinch a portion of the flour and roll into balls of equal size.
- If you are not able to roll, add a little more ghee or warm milk.

Tips for Maa Ladoo Recipe
1. Do roast the fried gram in low flame and ensure not to burn it. 2. Always cool the roasted fried gram completely, and then grind, otherwise, it becomes a paste. 3. Fried gram should be ground finely, else it breaks while rolling and don’t hold the shape. 4. Both fried gram and sugar should be fine, so sieving is important. 5. If using the whole cardamom, grind it along with fried gram or sugar and then sieve it. 6. Don’t add hot ghee (use warm ghee only), else the sugar melts and makes the ladoo sticky. 7. Also, shape the Maa Laddu when the ghee is warm itself, if it cools the ladoo cannot be shaped. 8. Do roll the Maa Ladoo Recipe tightly, so it doesn’t break easily. 9. If you are not able to shape it, sprinkle little warm milk, and go ahead. But the shelf life reduces. 10. Do not add ghee more than mentioned, else it changes the color and the Maladu Recipe turns sticky.
