Kozhukattai Dough Recipe | Kozhukattai Maavu Recipe with stepwise pics and a short YouTube video. If you like my video, please SUBSCRIBE to my youtube channel. I have got many requests to share a perfect method to make Kozhukattai maavu/Modak dough (outer covering), though the ingredients list is minimal, it is a little tricky to get the perfect dough consistency. If you miss the consistency, modak cannot be shaped, or it develops cracks after steaming or turn hard. I have used Homemade Rice Flour (with video) but you can use store-bought kolukattai maavu or idiyappam flour too. I have shared 3 ways of making this dough, you can select the method which suits the best for you, all the methods yields soft modak, if you follow the process correctly. But before jumping to the recipe, read the notes section carefully, which helps you a lot. This same flour can be used to prepare Idiyappam / String Hoppers also. Kozhukattai Dough Recipe | Kozhukattai Maavu Recipe

Kozhukattai Dough Recipe | Kozhukattai Maavu Recipe, though the ingredients list is minimal, it is a little tricky to get the perfect dough consistency. I have shared 3 ways of making this dough, you can select the method which suits the best for you.

Ingredients
  

  • 1 Cup Rice Flour Link to Homemade Rice flour
  • 1½ Cups Water
  • ¼ tsp Salt
  • 2 tsp Sesame Oil

Instructions
 

Method 1

  • First, measure and keep all the ingredients ready. In a bowl, add 1 cup of rice flour and 1.5 cups of normal water.
  • Add 1/4 tsp of salt and pour 1 tsp of sesame oil. Then, mix it well.
  • Ensure there are no lumps. To a heavy-bottomed or non-stick pan, pour the batter.
  • Simmer the flame completely and continue the cooking for 4 to 5 minutes. It thickens very soon.
  • Furthermore, cook till it turns shiny and forms as a mass. Keep covered for 5 minutes. Then, pour 1 tsp of sesame oil and knead the dough till smooth and soft. The dough should be nonsticky, then it's a perfect consistency.

Method 2

  • To a pan, pour 1.5 cups of water and 1/4 tsp of salt.
  • Once the water starts to roll boil, pour 1 tsp of sesame oil. Simmer the flame and add the flour very slowly. Cook till it turns shiny and forms as a mass. Keep covered for 5 minutes and then knead the dough till smooth and soft.

Method 3

  • To a bowl, add 1 cup of rice flour and 1/4 tsp of salt.
  • Pour roll boiling water (about 1.5 cups of water or little more) little by little to the flour.  Rice flour absorbs the water very quickly and the dough looks crumbled now. Keep the dough covered for 5 mins. Pour 1 tsp of sesame oil, then knead the dough till smooth and pilable.
  • Use this Kozhukattai Maavu Recipe to prepare Paal Kozhukattai.

Tips for Kozhukattai Maavu Recipe

  1. I used Homemade Rice Flour to prepare this Kozhukattai Maavu Recipe. But it can be replaced with storebought rice flour (idiyappam flour) or kozhukattai maavu too.
  2. If making the rice flour from scratch, use Raw Rice or Maavu Pacharisi or Dosa Rice.
  3. Use a heavy-bottomed or nonstick pan to prepare this dough otherwise, it sticks to the pan or gets burnt at the bottom.
  4. It required 1.5 cups of water for the rice flour I used. Water quantity may vary a bit according to the type of rice flour you use.
  5. Always cook the rice flour in low flame only. It should be fully cooked and look glossy. 
  6. Knead the dough till soft, pilable and nonsticky, then it is the right consistency.
  7. If the dough is stiff/dry, it cannot be shaped or it develops cracks after steaming or turn dense.
  8. If the dough turns sticky, add 1 or 2 tsp of sesame oil and knead again.
  9. If the dough is dry, add 1 or 2 tbsp of hot water and knead again.
  10. Always keep the dough covered with a damp wet cloth till use, to avoid dryness.

Method for Kozhukattai Dough Recipe

1. METHOD 1: First, measure and keep all the ingredients ready. In a bowl, add 1 cup of rice flour and 1.5 cups of normal water.
