This is a very basic post, I can’t mention it as a recipe but it is a much-needed one in day to day Indian cooking. Though there are hundreds of readymade coconut milk products in the market, I never buy as it is full of preservatives to increase the shelf life and it is not good in taste wise also. Homemade coconut milk stays good for 2 to 3 days under refrigeration and I have shared a technic in the notes/tips section to store it for 3 months. Those who are allergic to dairy milk products and soy milk can opt for this coconut milk as this is a vegan one. I use the 1st coconut milk extract (cannot be boiled) as a sidedish for Idiyappam, Appam, and 2nd extract for Veg Biryani, Coconut Milk Pulao, Parippu Pradhaman, and Sabji.

How to make coconut milk at home

Homemade Coconut Milk | How to make Coconut Milk at home
Equipment

Ingredients
- 1 Cup Grated Coconut
- ½ Cup Warm Water
Instructions
- Take a fresh mature coconut and break it open. Collect the water in a glass and remove the white flesh with a knife. Then, grate it with a coconut grater or chop the coconut flesh finely and grind it in a mixer. I used 1 cup of grated coconut and 1/2 cup of warm water to get thick coconut milk.
- Transfer the grated coconut to a mixer jar.
- Pour 1/2 cup of water and blend till the coconut is ground well for a few minutes.
- The ground coconut paste should be fine.
- Pour the ground coconut paste in a bowl lined with a thin muslin cloth or a fine strainer. Press with a spoon on the coconut paste so that the milk is strained.
- Or else, gather the edges of the cloth and squeeze it well.
- The coconut milk separates now. This is the Thick coconut milk or the 1st extract.
- For 2nd coconut milk extract: put back the coconut shreds in the mixer again. Pour 1 to 1.5 cups water and grind it again. Then, strain the coconut paste in a different bowl using a strainer or muslin cloth. If preferred, you can go for 3rd coconut milk extract too.Use this Homemade Coconut Milk to prepare Chole Biryani.

Tips for How to make Coconut Milk at Home
- Use fresh and mature coconut for a tasty Homemade Coconut Milk.
- Never use dry or desiccated coconut for extracting coconut milk, or else, frozen grated coconut (thaw it) can be used.
- Use warm water to extract coconut milk. Never use hot or cold water.
- I mostly stop with 1st and 2nd coconut milk. If preferred, dilute it further to extract 3rd coconut milk.
- 1 st coconut milk cannot be boiled as it gets curdled. But 2nd and 3rd coconut milk can be boiled and used in Payasam, Sabji, Biryani, etc.
- This coconut milk stays good for 2 to 3 days under refrigeration.
- This coconut milk can be poured in an ice tray, frozen, then stored in a ziplock cover and used for 3 months.
- Leftover coconut shreds can be oven or pan-roasted, cooled, and then ground into coconut flour. It can be used in making cookies, cakes, and bread.
