Garlic Murukku Recipe | Poondu Murukku Recipe
Equipment
- Stovetop
Ingredients
1 Cup = 250 ML, 1 tsp = 5 ML
- 1.5 Cups Rice Flour / அரிசிமாவு Link for Homemade Rice Flour
- ¼ Cup Besan Flour / கடலைமாவு
- 4 - 6 Flakes Garlic / பூண்டு (Big)
- 1 tsp Chilli Powder / மிளகாய்த்தூள்
- 1 tbsp Butter / வெண்ணை Link for Homemade Butter
- 1 tsp Sesame Seeds / எள்ளு
- Salt / உப்பு As Required
- Water / தண்ணீர் As Required
- Oil / எண்ணெய் For Deep Frying
Instructions
- First, measure and keep all the ingredients ready. In a mixer, add the chopped garlic.
- Grind it to a smooth paste by adding little water. Also, don't grind the garlic coarsely, as it gets stuck in the chakli press. To a wide bowl, add the Rice Flour, besan flour, chilli powder, sesame seeds, butter and required salt.
- Add the ground garlic, pour water little by little and start kneading the dough.
- Pour 2 tbsp of hot oil and knead the dough again. It should be soft and not stiff, else it will be hard to press. Keep the dough covered till you finish, to avoid drying. Grease the press with little oil, then take a portion of the dough and stuff it into the murukku presser.
- Take a ladle and make swirls on the backside, this method gives a good shape. If you have the experience, make swirls directly in the oil itself. Heat oil in a Kadai and check the temperature by dropping a small piece of the dough. If it raises immediately, then the oil temperature is perfect. Then drop it gently in the oil, just 2 or 3 at a time, accordingly to the size of the Kadai.
- Fry in medium flame on both sides, till golden colour and the shhhh sound, ceases. Repeat the same with the remaining dough. Drain it in a kitchen towel. The oil gets absorbed by time, pour a little and fry again. Do try this flavourful Garlic Murukku Recipe for this Diwali.

Tips for Garlic Murukku Recipe
1. If you want more garlic flavour, add 2 or 3 garlic flakes extra. 2. Grind the garlic to a smooth paste, else it gets stuck in the chakli press. 3. Sesame seeds can be replaced with the same quantity of jeera too. 4. Chilli powder can be replaced with 4 or 5 red chilli's. 5. If using red chilli's, soak it in warm water for 10 minutes and then grind it along with garlic flakes. 6. Adjust chilli powder or red chilli's as per spiciness required for this Poondu Murukku Recipe. 7. Addition of hot oil to the dough lends crispiness to the Garlic Murukku Recipe. Dough Consistency- If the dough is too moist, murukku cannot be shaped. Add 2 tsp of rice flour to shape it.
- If the dough is too dry, long thread-like murukku cannot be got. Drizzle very little water and knead again.
- Always cover the dough with a wet cloth, so it doesn’t dry and it will be easy to press.
- If the murukku is hard or dense, add 1 tsp of butter. Never skip butter, as it adds more taste and crispiness to the chakli.
- Don’t add butter more than mentioned, else the murukku dissolves in the oil.
- Grease the chakli press with little oil before stuffing the dough, so it will be easy to press.
- If preparing in large quantity, just double the ingredients and prepare the dough in batches.
- Do the whole frying process in medium flame, so the murukku gets cooked inside also.
