This sesame rice recipe is such a flavourful, perfect and even a quick lunchbox idea. This Ellu Sadam recipe is mainly prepared during Makar Sankranthi, Aadi 18 but you can have it during winter season frequently, as sesame seeds have the property of giving heat to the body. These sesame seeds have high iron content so people with Anaemia can have it at least twice in a week and it also strengthens the bones. But, try to use unpolished/unhulled sesame seeds as the nylon / hulled variety sesame seeds are less nutritious. Equipment

Ingredients
- 1 Cup Cooked Rice / சாதம்
- Salt / உப்பு
To Roast & Grind
- 1 tsp Oil / எண்ணெய்
- 1 tsp Urad Dal / உளுத்தம்பருப்பு
- 1 tsp Channa Dal / கடலைப்பருப்பு
- 5 to 6 Red Chilli / வரமிளகாய்
- 2 to 2.5 tbsp Sesame Seeds / எள்ளு
To Temper
- 2 tsp Oil / எண்ணெய்
- 1 tsp Mustard Seeds / கடுகு
- 1/2 tsp Urad Dal / உளுத்தம்பருப்பு
- 1 Sprig Curry Leaves / கருவேப்பில்லை
Instructions
- First, measure and keep all the ingredients ready.
- Pressure cook 1 cup of rice with 1.5 cups of water and let it cool down. The rice grains must be separate, not mushy. Now pour 1 tsp of oil in a pan and roast all the ingredients listed in the table ‘To Roast and Grind‘.
- Allow the roasted ingredients to cool down. Transfer everything to a dry mixer.
- Powder it little coarsely. Heat oil in a pan, add mustard seeds, once it splutters, add urad dal and curry leaves.
- Now, add the cooked rice, ground powder and required salt.
- Mix it gently without breaking the rice grains.
- Serve this Sesame Rice Recipe with Lady's Finger Tamarind Kootu.
Notes
Tips for Sesame Rice Recipe
- I cooked the rice in the water ratio of 1 into 1:5. Ensure the rice grains are separate and completely cooled, so it does not turn mushy while mixing.
- I used sona Masoori rice, you can even use Basmati Rice or any leftover rice too.
- Adjust red chilli and sesame seeds as per spiciness and flavour required.
I used black sesame seeds, you can use white sesame seeds too. - For more flavour, 2 crushed garlic flakes and 1/8 tsp of hing can be used while tempering.
- For a slight crunchiness and different taste, 1 tbsp of roasted peanuts or cashews can be added.
- The ground sesame seeds powder can be made in bulk and stored in a clean, airtight, dry jar. It stays good for 2 weeks under refrigeration.
