This ellu podi is a perfect, flavourful accompaniment with Idli, Dosa, Set Dosa, Wheat Dosa etc and why not? it can be mixed with hot rice and a dollop of ghee really it tastes so good. I have used black sesame seeds but it can be replaced with white sesame seeds but black ones are richer in Calcium, which strengthens the bones. These sesame seeds are rich in magnesium, iron, copper, zinc, fibre etc but use unpolished/unhulled sesame seeds as the nylon / hulled variety ones are less nutritious. Ellu Podi Recipe | Sesame Seed Powder Recipe

Ingredients
1 Cup = 250 ML, 1 tsp = 5 ML
- 1 Cup Sesame Seeds / எள்ளு
- ½ Cup Urad Dal / உளுத்தம்பருப்பு
- ¼ Cup Channa Dal / கடலைப்பருப்பு
- 10 - 12 Red Chilli / வரமிளகாய்
- 1 Sprig Curry Leaves / கருவேப்பில்லை
- 1 Generous Pinch Hing / பெருங்காயம்
- Salt / உப்பு As Required
Instructions
- First, measure and keep all the ingredients ready. Black Sesame Seeds can be replaced with white or a mixture of both can be used.
- Heat a pan, add the urad dal, chana dal and roast till golden colour. To the dal, add the red chilli's, curry leaves and roast till crispy, then keep aside. Now add the sesame seeds and roast till it pops up. Do everything in low flame.
- Allow everything to cool down. Transfer all the roasted ingredients to a dry mixer.
- Pulse it (3 to 4 times) to a semi coarse or smooth powder as preferred (never grind continuously as the sesame seeds may leave oil). Add required salt and give a quick pulse once again. Store it in a dry and clean jar.Serve this Ellu Podi Recipe with Rava Dosa.

Tips for Sesame Seeds Powder Recipe
- Black Sesame Seeds can be replaced with white sesame seeds or a mixture of both can be used.
- Adjust red chilli's as per spice level required for this Ellu Podi Recipe.
- For a variation, 1 tsp of peppercorns or 2 garlic flakes can be used, which lends a nice flavour. If using garlic, fry till crispy otherwise it becomes a paste, while grinding.
- Always roast red chilli along with dal for even roasting, if roasted alone it gets burnt.
- Slow roast all the ingredients in low flame to avoid burning, else the podi tastes bitter.
- This powder can be ground into a smooth/coarse powder as preferred.
- Don't grind sesame seeds for a long time, just pulse it, otherwise, it may leave oil.
- Even a small piece of jaggery or tamarind (fry it along with other ingredients) can be used which enhances the taste of the podi.
- This Sesame Seeds Powder Recipe stays good for 15 days at room temperature and 5 to 6 months in freezer.
