Eggless Vanilla Birthday Cake Recipe with step by step photos and a Short YouTube video. Also, if you Like my video, please share it and don’t forget to SUBSCRIBE to my channel. This is an easy, basic vanilla cake recipe, where I have used a very simple icing with just minimal ingredients. I doubled the ingredients, prepared 2 cakes and got 1 large cake, it was quite cheap too when made at home. Also, you can reserve some icing, add few drops of food colour and decorate it as per your creativity but I kept the cake simple by using few colour sprinkles only. I prepared this cake last year for my daughter’s birthday but somehow engaged by posting other recipes. Eggless Vanilla Birthday Cake

Eggless Vanilla Birthday Cake Recipe

This is an easy, basic eggless vanilla birthday cake recipe, where I have used a very simple icing with just minimal ingredients.

  • OTG Oven / Microwave Oven

Ingredients
  

  • 1.5 Cups Maida / All Purpose Flour / மைதா
  • 1 tsp Baking Powder / Soda / பேக்கிங் பவுடர்
  • 1/4 tsp Salt / உப்பு
  • 3/4 Cup Sugar / சக்கரை (150 gram)
  • 90 ML Oil / எண்ணெய்
  • 1/2 Cup Water / தண்ணீர்
  • 1 tbsp Vanilla Essence / வெண்ணிலா எசென்ஸ்
  • 3 tbsp Curd / தயிர் Link for Homemade Curd
  • 1 tbsp Vinegar
  • 1/2 tsp Baking Soda

Instructions
 

  • First, measure and keep all the ingredients ready. To a bowl, add the curd + vinegar + baking soda and mix well. Curd and baking soda react with each other and now you can see bubbles rising on top. Set the mixture aside for 5 minutes only.
  • Sieve the maida, baking powder and salt twice.
  • To another bowl, pour the oil and water.
  • To the oil-water mix, pour the curd + vinegar + baking soda mixture. Then add the vanilla essence and whisk it.
  • To the sieved dry ingredients pour the wet ingredients. Whisk everything without any lumps. By the meantime pre-heat the oven for 15 minutes. Brush a baking tray with oil and dust little flour all over. Now pour the cake batter to the tray, then shake a little, so that the air bubble release.
  • Place the tray in the oven in baking mode and bake for 30 to 35 minutes at 180c or a toothpick inserted in the center comes out clean. Once cooled, invert the tray on a plate and gently tap to remove the cake.
  • For the Icing: Keep the cream, powdered sugar and vanilla essence ready. Then transfer everything to a mixing bowl. Using a hand whisk or electric whipper, whip it in high speed for 3 minutes until the cream reaches stiff peak consistency.
  • For the Sugar Syrup: To a bowl add 2 tbsp of sugar and warm water. Mix well till the sugar dissolves completely (watch the video link for complete recipe). I doubled the ingredients to prepare 2 cakes, you can make 1 single cake and slice it into 2 pieces too. Then pour little sugar syrup over the bottom layer and cover it with the icing.
  • Now cover the bottom layer with another sliced cake. Brush it with the sugar syrup followed by icing on the top and sides too. I used a little pink food colour in the icing, finally used some sprinkles all over the cake.

Tips for Eggless Vanilla Birthday Cake Recipe

  1. I doubled the ingredients and baked 2 cakes, so got 1 large cake. You can bake 1 single cake and slice it into 2 layers too.
  2. Always cool the cake and then slice it, else it gets crumbled.
  3. Ensure the cake is completely cooled before doing the icing. Otherwise, the icing melts and becomes a mess.
  4. In Microwave: Preheat it and bake the cake in convection mode at 180c for 30 to 35 minutes.
Common tips in Baking
1. Baking powder cannot be substituted with baking soda, both are different.
2. Ensure baking powder and baking soda is within the expiry date, else the cake won't raise and turns spongy.
3. Once you prepare the batter, bake it immediately, otherwise, the baking powder de-activate and the cake won't raise.
4. Don’t over whisk the batter, else the cake becomes hard.
5. Choose correct sized baking tray, else while baking itself the cake overflows. To avoid this fill the batter to 1/2 of the tray.
6. If the cake doesn’t get baked in the center, cover the tray with an aluminium foil or butter paper and bake for another 10 minutes.
