This is an extraordinary and unique cake recipe, the ingredients used are different from the regular ones, yes right! Gulab Jamun Mix is used to prepare this pillowy soft and spongy cake. It is one of the easiest cakes prepared with a handful of ingredients. Furthermore, to make it more healthy, all-purpose flour/maida can be substituted with atta and white sugar with jaggery, cane sugar, or brown sugar too. This post was in my draft for more than 6 months, actually, I prepared this cake after Diwali last year, as there were some Gulab Jamun packets leftover and we all were really bored of eating jamuns, so I was searching for some unique recipes to finish off the Jamun packets and finally ended with this one. Eggless Gulab Jamun Mix Cake Recipe

Eggless Gulab Jamun Mix Cake Recipe is one of the easiest cakes prepared with a handful of ingredients. Furthermore, to make it more healthy, all-purpose flour/maida can be substituted with atta and white sugar with jaggery, cane sugar, or brown sugar too.

Equipment

  • OTG Oven / Microwave Oven
  • Baking Tray

Ingredients
  

Dry Ingredients

  • ¾ Cup Jamun Mix
  • ¾ Cup All Purpose Flour / Maida
  • 1 Cup Powder Sugar
  • ½ tsp Baking Powder
  • ¼ tsp Baking Soda
  • ¼ tsp Cardamom Powder

Wet Ingredients

  • ¾ Cup Milk {At Room Temperature)
  • ¼ Cup Oil (Unflavoured Oil)

Instructions
 

  • Dry Ingredients: Measure 3/4 cup of jamun mix, 3/4 cup of flour and 1 cup of powdered sugar.
  • Then, measure 1/2 tsp of baking powder, 1/4 tsp of baking soda and 1/4 tsp of cardamom powder.
  • Wet Ingredients: measure 3/4 cup of milk and 1/4 cup of oil.
    Notes: Use milk at room temperature and neutral un-flavored oil.
  • Place a sieve over a bowl. Then, add the flour.
  • Now, add the Jamun mix.
  • Add the powdered sugar, baking powder, and baking soda.
  • Finally, add the cardamom powder.
  • Sift all the dry ingredients once.
  • Now, pour the milk and oil.
  • Whisk everything well. In the meantime, preheat the oven for 10 minutes at 180c / 350F.
  • Fold it gently and ensure there are no lumps.
  • Then, brush a baking tray with oil and dust little flour all over or line it with butter paper. Transfer the batter to the baking tray, then level it with a ladle/spatula and shake the pan twice, so that the air bubbles release.
  • Place the tray in a pre-heated oven and bake it for 35 to 40 minutes at 180c or a toothpick inserted in the center comes out clean.
  • Once cooled, invert the tray to a plate and gently tap to remove the cake. Then slice it with a sharp knife.

Notes

Tips for Jamun Mix Cake Recipe

1. For a healthy version, maida can be replaced with atta, but the cake will be a little dense.
2.White sugar can be replaced with brown sugar, cane sugar, or even powdered jaggery too.
3. Cardamom powder can be replaced with 1 tsp of vanilla essence or extract.
 4.Sifting all the dry ingredients is a must for even mixing and to avoid lumps. 
5. Ensure milk is at room temperature and not cold.
6.For a vegan version replace milk with soy or almond or cashew milk. But, remember the jamun mix has milk solids in it.
7.Also, milk can be substituted with cream for a rich version.
 8.I used unflavoured/neutral oil, it can be replaced with olive oil too, it gives a nice texture to the cake.
9. Do not overbake the cake, else it turns hard. After 25 minutes keep an eye on the cake.
10.In Microwave: Preheat it and bake the cake in convection mode at 180c for 40 to 45 minutes.
11.The same batter can be used to prepare jamun mix muffins. But bake it for only 15 to 20 minutes.
12.This Eggless Gulab Jamun Mix Cake Recipe, stays good for 2 days under room temperature.
13. Always cool the cake and then slice it, else it gets crumbled.
Common Tips in Baking
  1. Baking powder cannot be substituted with baking soda, both are different.
  2. Ensure baking powder and baking soda are within the expiry date, else the cake won't raise and turns spongy.
  3. Once you prepare the batter, bake it immediately, otherwise, the baking powder de-activate and the cake won't raise.
  4. Choose the correct sized baking tray, else while baking itself the cake overflows. To avoid this fill the batter to 3/4 that of the tray.
  5. If the cake doesn’t get baked in the center, cover the tray with aluminum foil or butter paper and bake for another 10 minutes.

Method for Eggless Gulab Jamun Mix Cake Recipe
