Eggless Butter Cake Recipe / Plain Cake Recipe with step by step pics and a short Youtube video. If you like my video, please share it and don’t forget to SUBSCRIBE to my channel. The best ever cake that I have baked till today, with minimal ingredients and really an utterly buttery cake with a feathery texture. I always use Homemade Butter for all my baking recipes and it lends perfectly baked goodies but you can use store-bought, good quality butter also. But always ensure to use fresh butter, as the old rancid one loses its sweetness and the bitterness will be felt in the baked cake. If you are health conscious, you can go with whole wheat flour but the cake will be definitely dense, so go for organic or unbleached All Purpose Flour / Maida which is the key ingredient to get a pillowy soft cake. One single slice of cake makes your tummy full, it is really heavy and mildly sweetened which will be apt for tea time. Eggless Butter Cake Recipe / Plain Cake Recipe is the best ever cake that I baked till today, with minimal ingredients and really an utterly buttery cake with a feathery texture.

Ingredients
  

1 Cup = 250 ML, 1 tsp = 5 ML

  • ½ Cup Butter
  • 400 Grams Condensed Milk
  • 1 tsp Vanilla Essence
  • 1.5 Cups Maida / All purpose Flour
  • 1.5 tsp Baking Powder
  • ⅛ tsp Salt
  • 1 - 1.5 Cup Milk

Instructions
 

  • First, assemble with all the ingredients. Use, fresh and soft butter not melted one. If using, salted butter, skip the salt from the ingredients list.
  • To a wide bowl, add the butter. Then, with a stand mixer or electric beater or even hand whisk, beat the butter till light and soft.
  • Pour the condensed milk, vanilla essence and whisk again.
  • Place a sieve over the wet ingredients, add flour, baking powder and salt. Sift everything once.
  • In low speed, whisk till there are no lumps. Pour 1 to 1.5 cup of milk (depending on the batter thickness) and gently fold again. Never overdo else the gluten strands release from the flour and spoil the structure of the cake. By the meantime, preheat the oven for 10 minutes at 180c / 350F.
  • Then, brush a baking tray (Bread Loaf Tin Size that I used here, L-7", B-4" and H- 3.5") with oil and dust little flour all over or line it with a butter paper. Transfer the batter to the baking tray, then level it with a ladle/spatula slightly. Gently tap the tray twice, for the air bubbles to release. Place the tray in the oven and bake it for 35 to 40 minutes at 180c or till a toothpick inserted in the centre of the cake comes out clean. Once cooled, invert the tray on a wire rack and gently tap to remove the cake. Then slice it with a sharp knife.

Tips for Plain Cake Recipe

1. Use fresh and good quality butter, as it is the key ingredient.
2. Never use old rancid butter, as it loses the sweetness  and the bitter taste will be felt in the final cake.
3. The butter should be at room temperature and soft but don't use melted butter.
4. Always whip the butter till light and fluffy to get a nice texture.
5. Condensed milk acts as an egg replacer and the sweetness was just perfect for me. If you want more sweetness increase condensed milk to 1/4 cup more.
6. Only All Purpose Flour, lends the soft and feathery texture to the Plain Cake Recipe. If reluctant of using Maida, use organic or unbleached variety.
7. For healthy version, wheat flour can be used but the cake will be definitely dense.
8. Don't over whisk the batter after adding maida, else it releases gluten strands and the structure of the cake gets spoiled.
9. This Eggless Butter Cake Recipe stays good for 2 days at room temperature.
10. Always cool the cake and then slice it, else it gets crumbled.
11. In Microwave: Preheat it and bake the cake in convection mode at 180c for 35 to 40 minutes.
Common Tips in Baking
1. Baking powder cannot be substituted with baking soda, both are different.
2. Ensure baking powder is within the expiry date, else the cake won't raise and turns spongy.
3. Once you prepare the batter, bake it immediately, otherwise, the baking powder de-activate and the cake won't raise.
4. Don’t over whisk the batter, else the cake becomes hard.
5. Choose correct sized baking tray, else while baking itself the cake overflows. To avoid this fill the batter to 1/2 of the tray.
6. If the cake doesn’t get baked in the center, cover the tray with an aluminum foil or butter paper and bake for another 10 minutes.

    Hi,
    Can we add raisins and nuts to this recipe…if possible how much can be added…?

      It is had as a plain teatime cake but you can add 1/4 cup of nuts for 1.5 cups of flour. Whenever you add nuts to the batter, always mix it very little flour and then add, else the nuts sink to the bottom. You can check the ratio of nuts to flour in Wheat cake recipe.     hi, im from malaysia, i did this recipe but my batter so runny , i just add 1 cup milk

      Use the same set of measuring cups for all the ingredients, I too used 1 cup of milk, but the batter was thick when I prepared. Secondly, add milk in intervals, not in one stretch, according to the batter’s consistency. Have a nice day Meera.
