Diamond Biscuits / Maida Biscuits / Kalakala Biscuits Recipe with step by step and a short YouTube video. It is a super easy, mildly sweetened teatime snack, and I have so much excitement every time when trying these biscuits, really love the cutting part in the recipe, as we can play with the dough. From my childhood, whenever my dad buys mixture from shops, I carefully pick and eat all these biscuits alone, on seeing it, he started to buy these biscuits also separately, so sweet of him. It is also called as Sweet Diamond Cuts, Shakkarpara, Shankarpali etc, one recipe with so many names. The same recipe has a spicy version too and you can add these biscuits in Madras Mixture, Aval Mixture and Cornflakes Mixture too. Diamond Biscuits Recipe

Diamond Biscuits | Maida Biscuits | Kalakala Biscuits Recipe

Diamond Biscuits / Maida Biscuits / Kalakala Biscuits Recipe is a super easy, mildly sweetened teatime snack. The same recipe has a spicy version too and you can add these biscuits in Madras Mixture, Aval Mixture and Cornflakes Mixture too.

Ingredients
  

  • 1½ Cup Maida / All purpose Flour
  • ½ Cup Powdered Sugar
  • 2 Cardamom
  • 1 Pinch Baking Soda
  • 1 Pinch Salt
  • 2 tbsp Ghee Link for Homemade Ghee
  • Water As Required
  • Oil For Deep Frying

Instructions
 

  • First, measure and keep all the ingredients ready. To a mixing bowl, add the maida and powdered sugar. I ground the cardamom pods with the sugar, you can use 1/2 tsp of cardamom powder too.
  • Then, add baking soda, salt and ghee.
  • Now, pour water slowly and combine everything well. The dough should be smooth, pilable and stiff. Set the dough aside for 15 minutes.
  • After the resting time knead the dough again and divide it into 2 large balls. Dust the rolling board with maida generously. Place the dough over the board, dust with some flour and roll the dough into medium thickness not thin.
  • First, cut the dough horizontally and then vertically, as diamond or square-shaped. Then with a flat ladle or scraper or with your fingers remove it carefully and transfer it to a plate.
  • Heat oil in a pan to medium heat only not fuming, then drop the cut dough carefully in batches.
  • Fry till golden colour on both sides and drain it in a kitchen towel.
    Enjoy this Diamond Biscuits during teatime.

Tips for Maida Biscuits

1. For a healthy version, equal measure of wheat flour and maida can be used.
2. Addition of baking soda prevents the Maida Biscuits from hardening.
3. Ghee can be replaced with the same quantity of butter too.
4. Don't add ghee more than mentioned, as it makes the Diamond Biscuits soggy.
5. I used cardamom for flavour, you can use 2 drops of vanilla or rose essence too or it tastes good if made plain also.
6. The dough should be smooth as well as stiff not sticky, else you will not be able to roll.
7. If the dough turns loose or sticky, add 1 or 2 tsp of maida and knead again.
8. Always roll the dough to medium thickness not too thin, else you will not be able to remove otherwise when fried it would be like chips.
9. Dust the rolling board and dough with maida generously, so it will be easy to remove the cut dough.
10. Ensure to fry the Kalakala Biscuits Recipe in medium flame, as the dough contains sugar in it, which makes the biscuits darker very soon.
11. For baked version - Pre-heat the oven to 180c for 10 mins, then bake the biscuits for 15 minutes.
