A very simple kheer or payasam made with dates, that can be finished within 20 minutes and completely sugar-free. It has a mild flavor of dates without overpowering anything. This Khajoor Ki Kheer is really a healthy sweet treat and best to have during or after fasting to get instant energy. Dates are protein rich and it is said to be one of the best snacks after a gym workout or maybe as the first meal of your day in small quantity regularly. Dates Kheer Recipe / Dates Payasam is a very simple kheer or payasam made with dates, that can be finished within 20 minutes and completely sugar-free.

Equipment

Ingredients
  

1 Cup = 250 ML, 1 tsp = 5 ML

  • 30 Dates
  • 2½ Cups Milk
  • 2 tbsp Ghee Link for Homemade Ghee
  • 2 tbsp Almonds
  • 2 tbsp Cashews
  • 3 Pods Cardamom
  • 2 tbsp Chopped Dates (Optional)

Instructions
 

  • Measure 2.5 cups of boiled milk in a bowl. Then, chop 2 tbsp of cashews, almonds, and 2 dates. Crush 3 cardamom pods.
    Quick Tips: Cardamom pods can be substituted with 1/2 tsp of cardamom powder.
  • Take 30 dates in a bowl. If the dates you use have seeds, remove them.
  • Pour 1/2 cup of milk over the dates. Let it soak for 15 to 20 minutes.
    Notes: Soaking the dates in milk, helps in easy grinding.
  • Heat 2 tsp of ghee in the pan. Then, add the chopped cashews, almonds, dates, and cardamom pods. Fry everything till it turn to golden color.
  • Keep the fried nuts, cardamom pods, and dates on a plate separately.
  • To the same pan, pour the remaining 2 cups of milk. Simmer the flame and let it boil for 2 minutes.
  • To a mixer/blender, add the soaked dates with the milk.
  • First, grind the dates once roughly.
  • Then, grind it to a smooth paste.
  • Now, add the ground dates paste to the boiling milk.
  • Mix well, till the milk and dates paste blend well. Simmer the flame and continue boiling for 3 to 4 minutes.
    Notes: For more taste, 1/2 cup of coconut milk can be added and just boil for 1/2 minute.
  • Now, add the fried cashews, almonds, dates, and cardamom pods.
  • Mix everything well and switch off the flame. Serve this kheer hot or cold.

Notes

Tips for Dates Kheer Recipe

  1. Ensure to remove the seeds from the dates and then grind. Otherwise, use seedless dates.
  2. Soaking the dates in milk is a must, as it helps in easy grinding.
  3. I didn't add sugar, as the sweetness in the dates is enough for me. But, if you want more sweetness, add 2 to 3 tbsp of sugar to the boiling milk.
  4. Always boil the milk and dates paste well for at least 3 minutes, so the kheer does not have the raw smell of the dates.
  5. For more richness and creaminess, 1/4 cup of condensed milk can be added.
  6. Even 1 generous pinch of nutmeg powder can be used for more flavor.
  7. Ghee roasted coconut bits or raisins (about 2 tbsp) can be added to the Dates Payasam.
  8. I added ghee roasted dates pieces to the kheer, which lends a nice crunch while drinking. Yet it is purely optional.
  9. For extra taste, 1/4 cup of thick coconut milk can be added at last. Just boil for 1/2 minute, not more than that, else it gets curdled.
  10. This Dates Kheer Recipe stays good for 2 to 3 days under refrigeration. As it gets thickened by time, add very little water or milk to dilute, then reheat and serve.

Method for Dates Payasam Recipe
