Date Cake Recipe / Eggless Dates Walnut Cake Recipe with step by step pics and a short Youtube video. If you like my video, please share it and don’t forget to SUBSCRIBE to my channel. This cake looks like the plum cake (christmas cake) in colour and texture but can be easily prepared with less ingredients and even a novice in baking can try it. The specialty of this cake is, it is an eggless, butterless one and no one will believe it is prepared without eggs, as the dates paste lends the super soft and moist texture to the cake. I used a bread loaf tin, but you can use the regular round or square shaped tins, if you gift pack during Christmas time. Also, dates has a lot of antioxidants and boost energy, while managing the blood sugar levels, so you can enjoy a slice of this cake during teatime too.

Date Cake Recipe / Eggless Dates Walnut Cake Recipe is an eggless, butterless one and no one will believe it is prepared without eggs, as the dates paste lends the super soft and moist texture to the cake.

Equipment

  • OTG Oven / Microwave Oven

Ingredients
  

1 Cup = 250 Grams

  • 2 Cups Dates
  • 1 Cup Milk (250 ML)

For the Batter

  • ¾ Cup Oil (190 ML)
  • ¼ Cup Curd (60 ML)
  • ¼ Cup Sugar (Optional)
  • 1 Cup Maida / All purpose Flour (250 Grams)
  • 1 Cup Atta / Wheat Flour (250 Grams)
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • ½ Cup Milk (125 ML)
  • ½ Cup Walnuts (125 Grams)

Instructions
 

  • First, measure and keep all the ingredients ready. Watch my YouTube video tutorial to see the complete steps.
  • Soak the dates in 1 cup of hot milk for 30 minutes (ensure to remove the seeds from the dates before soaking). Transfer the dates with milk to a mixer and grind it to a smooth paste. Then, transfer the dates paste to a mixing bowl.
  • Now pour the oil and curd. Using a hand whisk or electric blender, combine it till smooth. Then, add sugar and whisk again till the sugar granules dissolve completely.
  • Keep the dates paste by side. Place a sieve in another wide bowl, then sift the atta and maida (you can sieve it over the dates paste also).
  • Sift the baking powder and baking soda also.
  • Add the dates paste over the sieved dry ingredients. Whisk everything by pouring the milk at regular intervals.
  • Add the vanilla essence and give a final whisk, the batter should be smooth and soft. Now add the chopped walnuts (reserve little walnuts) and gently fold the batter (no more whisk). By the meantime, preheat the oven for 10 minutes at 180c. Then, brush a baking tray with oil and dust little flour all over or line it with a butter paper.
  • Transfer the batter to the baking tray, then level it with a ladle/spatula and sprinkle the remaining walnuts all over the batter. Shake the pan twice, so that the air bubbles releases. Place the tray in a pre-heated oven and bake it for 35 to 40 minutes at 180c or a toothpick inserted in the center comes out clean. Once cooled, invert the tray on a plate and gently tap to remove the cake. Then slice it with a sharp knife.

Tips for Eggless Dates Walnut Cake Recipe

  1. Ensure to remove the seeds from the dates before soaking or use seedless dates.
  2. Soak the dates in hot milk and for at least 30 minutes, so it will be easy for grinding.
  3. For vegan version, milk can be replaced with soy, almond or cashew milk too.
  4. Also, curd can be replaced with water + 1 tsp of vinegar.
  5. Use any flavorless oil only, else the cake smells bad, or else oil can be replaced with butter too.
  6. This Date Cake Recipe can be prepared with atta or maida alone or equal quantity of both the flours.
  7. For a different flavour and taste, even choco chips, 1 tsp of instant coffee powder, 1/4 tsp of cinnamon or nutmeg powder can be used.
  8. Always cool the cake and then slice it, else it gets crumbled.
  9. In Microwave: Preheat it and bake the cake in convection mode at 180c for 30 to 35 minutes.
Common Tips in Baking
1. Baking powder cannot be substituted with baking soda, both are different.
2. Ensure baking powder and baking soda is within the expiry date, else the cake won't raise and turns spongy.
3. Once you prepare the batter, bake it immediately, otherwise, the baking powder de-activate and the cake won't raise.
4. Don’t over whisk the batter, else the cake becomes hard.
5. Choose correct sized baking tray, else while baking itself the cake overflows. To avoid this fill the batter to 1/2 of the tray.
6. If the cake doesn’t get baked in the center, cover the tray with an aluminum foil or butter paper and bake for another 10 minutes.
