Crispy Aloo Tikki Recipe / Aloo Patties Recipe with step by step pics and a short Youtube video. If you like my video, please share it and don’t forget to SUBSCRIBE to my channel.  Literally, in Hindi and Marathi, Aloo means potato and Tikki means a cutlet or croquette. This Tikki is prepared simply with boiled potatoes along with some spice powders, shaped like small cutlets and then fried till golden colour. It is usually served with Ragda Curry along with tamarind based chutney or sometimes with Chaat Chutney or Mint Chutney or plain curd/yoghurt too. In some regions, even other stuffings like green peas, paneer and chana dal is used to prepare these patties. To cut off the calories, I have shallow fried the Tikki, alternatively, it can be air fried or Tawa fried or deep-fried too as per wish. This Tikki can be frozen for 2 months, fried whenever needed (but thaw it before use) and it is a perfect teatime snack too. If interested, check my 90+ Holi Festival Recipe collection here…

Crispy Aloo Tikki Recipe / Aloo Patties Recipe is prepared simply with boiled potatoes along with some spice powders, shaped like small cutlets and then fried till golden colour.

Equipment

Ingredients
  

1 Cup = 250 ML, 1 tsp = 5 ML

  • ½ Kg Potato
  • ½ tsp Jeera
  • 1 tsp Ginger Garlic Paste Link for Homemade Ginger- garlic paste
  • 2 Pinch Turmeric Powder
  • 1½ tsp Chilli Powder
  • ½ tsp Amchur Powder
  • ½ tsp Chaat Masala Powder
  • 1 Green Chilli
  • 2 tbsp Coriander Leaves
  • 2-3 tbsp Corn Flour
  • Salt As Required
  • Oil For Frying

Instructions
 

  • First, measure and keep all the ingredients ready. Then, chop the green chilli finely.
  • Pressure cook the potatoes well for 5 to 6 whistles. Once the pressure subsides, drain the water immediately and ensure there is not much moisture content in the potatoes. Also, you can cook the potatoes 3 to 4 hours prior and refrigerate it. Mash the potatoes well till smooth.
  • To the potatoes add the jeera, ginger- garlic paste, turmeric powder, chilli powder, amchur powder and chat masala powder. Then add the green chilli, coriander leaves, cornflour (always cool the potatoes and add the cornflour, else it turns sticky) and required salt.
  • Mix everything well. Divide the mixture into equal-sized balls.
  • Shape like patties, either small or big, thin or thick as preferred.
  • I shallow fried the tikki, you can deep fry or even fry it in a tawa. Heat little oil in a pan and place the tikki one by one carefully. Fry it in medium flame, till golden colour on both sides. Then drain it in a kitchen towel.

Tips for Aloo Patties Recipe

1. Drain the water immediately from the potatoes after it is cooked, there should not be much moisture, otherwise, the tikki does not hold the shape.
2. I have kept the recipe simple by using potatoes alone, you can add peas, paneer and chana dal in the stuffing.
3. Adjust chilli powder and green chilli as per spice level required for this Crispy Aloo Tikki Recipe.
4. Always cool the potatoes and then add the cornflour, else it turns sticky.
5. Cornflour can be replaced with rice flour, poha, oats, crushed cornflakes too. If preparing for fast, use arrowroot powder, sago powder or buckwheat flour.
6. Even bread crumbs can be used for binding the tikki. But use 3 to 4 days old or dry bread crumbs.
7. If preparing during fast use rock salt instead of regular salt and skip ginger- garlic paste from the ingredients.
8. The tikki can be shaped thick or thin and small or big as per wish.
9. I shallow fried the tikki to cut off the calories. You can deep fry or air fry or tawa fry too.
10. For Baking: pre-heat the oven for 10 minutes, grease the tray with oil and arrange the tikkis. Bake it for 10–12 mins at 180c, till golden colour, then flip it to the other side and bake for another 10 mins.
