Cornflakes Mixture Recipe / Cornflakes Chivda Recipe with step by step pictures. This is a light, crispy snack, apt for the last minute Diwali preparation. Unlike Madras Mixture, this one doesn’t call for lengthy work. Just a cup of cornflakes, peanuts, fried gram tossed up with chilli powder and salt, that’s the recipe. If you don’t want a deep-fried version, then go ahead with shallow fry or even bake the cornflakes (I have shared the method in the TIPS section), which is a 100% guilt-free snack. Also, if you don’t have raw cornflakes, you can use Kellogs but not flavoured ones, where no frying is also needed. - 2 Cups Corn Flakes
- ¼ Cup Peanuts
- ¼ Cup Fried Gram
- 10 Cashew
- 10 Raisins
- 1 Sprig Curry Leaves
- ¼ tsp Turmeric Powder
- 1½ tsp Chilli Powder
- 1 Generous Pinch Hing
- Salt As Required
- ½ tsp Powdered Sugar
- Oil For Deep Frying
Instructions
- First, measure and keep all the ingredients ready.
- I used a metal strainer to fry, so it will be easy to collect all the fried items but you can fry in oil directly too. Heat oil in a pan and add the peanuts. Once the peanuts turn to golden colour, drain it in a kitchen towel.
- Then add the fried gram, fry it in very low flame as it turns brown soon and keep aside. Now fry the cashews and raisins.
- Simmer the flame and fry the cornflakes in batches. Finally, fry the curry leaves with a generous pinch of hing till crispy.
- To a wide plate or bowl, transfer the fried cornflakes, peanuts, fried gram, cashews, raisins and curry leaves. Add turmeric and chilli powder.

Tips for Cornflakes Chivda Recipe
1. First, there is no specific measurement for this Cornflakes Mixture Recipe. You can even add Maida Biscuits, Karaboondi, Omapodi, Murukku, fried poha etc, Also alter and adjust the ingredients as per your wish.2. If you don't have raw cornflakes, unflavoured kellogs can be used. No frying is needed, if using kellogs.
3. For more flavour, 3 to 4 crushed garlic flakes with skin can be fried in oil and used.
4. Always use fresh oil for frying otherwise, the mixture smells bad.
5. Fry the cornflakes and fried gram in medium flame, else it gets burnt soon.
6. I used a metal strainer to fry, so it will be easy to collect all the fried items but you can fry it in oil directly too.
7. Adjust chilli powder as per spice level required. You can even add 1/2 tsp of jeera powder and chaat masala too.
8. Add curry leaves generously for a nice flavour. 9. Addition of powdered sugar enhances the taste of the mixture. 10. It stays good for 15 days when stored in an airtight and dry container.
11. For Baked Version: Preheat the oven at 180c for 10 minutes. Then place a butter paper in the tray, spread the cornflakes over it and bake for 3 to 4 minutes. Don't forget to stir in the middle and keep an eye over the cornflakes after 2 minutes, else it gets burnt easily.
