This Chakka Varatti Payasam is a must dessert during Vishu or Onam Festival in Kerala. Traditionally, Chakka Pradhaman/Jackfruit Kheer is made using Chakka Varatti – the jackfruit preserve that is made when the jackfruit is found in abundance in summer and preserved for the whole year. This payasam can be prepared within 15 minutes, just mix the chakka varatti with milk, coconut milk, and finally top up with ghee fried cashews. Jackfruit Payasam Recipe

Chakka Varatti Pradhaman Recipe | Chakka Varatti Payasam
Equipment
- Stovetop
- Kadai / Pan
Ingredients
1 Cup = 250 ML, 1 tsp = 5 ML
- ½ Cup Chakka Varatti / Jackfruit Halwa Link for Chakka Varatti
- 1 Cup Milk
- ¼ Cup Coconut Milk Link for Homemade Coconut milk
- 2 tsp Ghee Link for Homemade Ghee
- 5 to 6 Cashews
- 1 tbsp Coconut Pieces
- 3 Pods Cardamom
Instructions
- First, measure 1/2 cup of Chakka Varatti (click here for link) and 1/2 cup of milk.
- Then, measure 1/2 cup of milk and 1/4 cup of thick coconut milk. Slit 5 to 6 cashews, 1 tbsp of coconut pieces, and crush 3 cardamom pods.
- To a mixer/blender, add 1/2 cup of chakka varatti and pour 1/2 cup of milk.
- Then, blend it once smoothly. This step is optional, you can directly stir it in the pan itself but it takes a long time for even mix. Then, keep by side.
- Heat 2 tsp of ghee in a pan. Then, add the cashews, coconut pieces, cardamom pods. Fry everything till golden color.
- Keep the fried cashews, coconut pieces, and cardamom pods separately on a plate.
- To the same pan, pour 1/2 cup of milk. Let the milk boil for 2 minutes. Now, add the blended chakka varatti with milk.
- Mix well and boil again for 2 minutes.
- Simmer the flame and pour the thick coconut milk. Give a boil for just 1/2 minute only, not more than that, else the payasam may get curdled. Switch off the flame.
- Finally, add the fried cashews, coconut pieces and cardamom pods.

Tips for Chakka Varatti Payasam
- This Chakka Varatti Payasam can be easily doubled or tripled.
- Use a heavy-bottomed or non-stick pan and do the whole process in low flame to avoid the payasam burning at the bottom.
- I didn't add any jaggery as the sweetness in the chakka varatti was enough for me. But if you feel the sweetness is less, add 2 to 3 tbsp of pure or filtered jaggery.
- Coconut pieces can be replaced with 2 tbsp of grated coconut. But coconut pieces lend a nice crunch while drinking the payasam.
- For more taste, 5 to 6 ghee fried raisins can be added to the payasam.
- Use freshly extracted coconut milk for a tasty Chakka Varatti Pradhaman Recipe.
- After adding thick coconut milk, boil for just 1/2 minute, not more than that time. Otherwise, the payasam may get curdled.
