Carrot Beans Poriyal / Stir Fry is a simple basic recipe which requires less than 10 minutes to prepare. The time consuming part is chopping the veggies only. The combination of carrot and beans is unique, tempered with spices and flecked with coconut. It is a medley of veggies and it tastes delicious with any Sambar and rice.

Ingredients

- 1 Big Onion
- 3 Carrot
- 10 to 15 Beans
- 2 Green Chilli
- ¼ tsp Turmeric Powder
- 1½ tsp Sambar Powder Link for Homemade Sambar powder
- 1 tbsp Grated Coconut
- Salt As Required
To Temper
- 1 tsp Mustard Seeds
- ½ tsp Urad Dal
- ½ tsp Jeera
- 1 Pinch Hing
- Few Curry Leaves
- 1 tbsp Oil
Instructions
- Trim the edges of the beans and take the fibre in the sides. Peel the skin of carrot, and wash both the veggies. Chop onion, carrots and beans finely. Also slit green chilli's.
- Heat the kadai and temper with the items given under the table 'To Temper'. Add onion, green chilli's and fry till
- Now add carrot, beans, turmeric powder, sambar powder and salt. Sprinkle little water and cook till the veggies turns soft but not mushy. Finally add grated coconut and mix well.
Notes
Tips for Carrot Beans Stir Fry
1. For variation of this Poriyal, you can use red chilli for tempering.2. Add a pinch of sugar while cooking, to retain the color of the veggie in Carrot Beans Stir Fry.
3. Always wash the veggies before chopping or else the nutrients will lose.

Method for Carrot Beans Poriyal

Garnish this Poriyal with some coriander leaves and serve it with any spicy kuzhambu and rice.
