It just melts in the mouth and the addition of turmeric powder lends a beautiful colour too. I used chilli powder but it can be replaced with the same quantity of pepper powder or made plain too. Besan Chakli Recipe

Besan Murukku Recipe | Kadalai Maavu Murukku
Equipment
- Stovetop
- Kadai / Pan
- Murukku Presser
Ingredients
1 Cup = 250 ML, 1 tsp = 5 ML
- 1 Cup Rice Flour Link for Homemade Rice flour
- ½ Cup Besan Flour
- ¼ tsp Turmeric Powder
- ½ tsp Chilli Powder
- 1 tsp Sesame Seeds
- 1 Generous Pinch Hing
- 1 tbsp Butter Link for Homemade Butter
- 1 tsp Hot Oil
- Salt As Required
- Oil For Deep Frying
Instructions
- First, measure and keep all the ingredients ready.
- To a sieve, add the rice flour and besan flour. Sift it once or twice.
- To the flours, add the turmeric powder, chilli powder, sesame seeds, hing and required salt.
- Then, add 1 tbsp of melted butter and 1 tsp of hot oil from the pan.
- Now, start kneading the dough by adding water little by little.
- The dough should be soft and not stiff, else it will be hard to press. Keep the dough covered till you finish, to avoid drying.
- Grease the press with little oil, then take a portion of the dough and stuff it into the murukku presser.
- Take a ladle, grease it with little oil and make swirls on the backside, this method gives a good shape. If you have the experience, make swirls directly in the oil itself.
- Heat oil in a kadai and check the temperature by dropping a small piece of the dough. If it raises immediately, then the oil temperature is perfect. Then drop it gently in the oil, just 2 or 3 at a time, accordingly to the size of the kadai.
- Fry in medium flame on both sides, till golden colour and the shhhh sound, ceases. Repeat the same with the remaining dough. The oil gets absorbed by time, pour a little and fry again.
- Drain the fried murukku in a kitchen towel to absorb the excess oil.Try this Besan Murukku Recipe for this coming Gokulashtami festival.

Tips for Besan Murukku Recipe
1. Sieve the rice flour and besan flour once or twice. Otherwise, continuous swirls cannot be made and the murukku breaks.2. Addition of turmeric powder lends a bright colour to the Kadalai Maavu Murukku.
3. Chilli powder can be replaced with 4 or 5 red chilli's. If using red chilli's, soak it in warm water for 10 minutes, grind it separately and then add to the dough.
4. Adjust chilli powder or red chilli's as per spiciness required for this chakli.
5. White sesame seeds can be replaced with the same quantity of jeera, ajwain or black sesame seeds.
6. Addition of hot oil to the dough lends crispiness to the Besan Murukku Recipe. Dough Consistency
- If the dough is too moist, murukku cannot be shaped. Add 2 tsp of rice flour to shape it.
- If the dough is too dry, long thread-like murukku cannot be got. Drizzle very little water and knead again.
- Always cover the dough with a wet cloth, so it doesn’t dry and it will be easy to press.
- If the murukku is hard or dense, add 1 tsp of butter. But never skip the butter, as it adds more taste and crispiness to the chakli.
- Don’t add butter more than mentioned, else the murukku dissolves in the oil.
- Grease the chakli press with little oil before stuffing the dough, so it will be easy to press.
- If preparing in large quantity, just double the ingredients and prepare the dough in batches. Otherwise, the murukku turns reddish soon.
- Do the whole frying process in medium flame, so the murukku gets cooked inside also.

Method for Kadalai Maavu Murukku
1. First, measure and keep all the ingredients ready.
