Beetroot Poriyal Recipe aka Beetroot stir fry recipe is a very simple poriyal. It also tastes awesome with its natural sweetness and overall beetroot decreases the risk of obesity, heart disease and promotes a healthy complexion.

Equipment

Ingredients
1 Cup = 250 ML, 1 tsp = 5 ML
- 1 Onion / பெரிய வெங்காயம்
- 2 Beetroot
- 2 Green Chilli / பச்சைமிளகாய்
- 1 tsp Sambar Powder / சாம்பார் தூள் Link for Homemade Sambar powder
- 2 tbsp Grated coconut / துருவிய தேங்காய்
- Salt / உப்பு As Needed
To Temper
- 3 tsp Oil / எண்ணெய்
- 1 tsp Mustard Seeds / கடுகு
- ½ tsp Urad Dal / உளுத்தம்பருப்பு
- ½ tsp Jeera / சீரகம்
- 1 Generous Pinch Hing / பெருங்காயம்
- 1 Sprig Curry Leaves / கருவேப்பில்லை
Instructions
- Peel the skin of the beetroot, chop onion and beetroot finely, slit green chilli's.
- Heat oil in a Kadai, temper with the items given in the table 'To Temper'. Add onion, green chilli and fry till transparent.
- Now add beetroot, sambar powder, salt and mix well.
- Add little water and cook till beetroot turns soft but not mushy. Finally, add grated coconut and mix well.
- Garnish with coriander leaves and serve this poriyal with any variety of rice.
Notes
Tips for Beetroot Stir Fry Recipe

For variation, use red chilli for tempering.

Instead of chopping, you can also grate the beetroot.

Adding sambar powder is optional, but it gives a nice taste to the Poriyal.

You can add a piece of crushed garlic pod while tempering, which gives a nice flavour.
