Baby Corn Pepper Fry Recipe / Baby Corn Milagu Varuval with step by step photos and a Short YouTube video. Also, if you Like my video, please share it and don’t forget to SUBSCRIBE to my channel. This is a very quick side dish or even name it as a starter, which can be done in flat 15 minutes and tastes very close to 5-star hotel dish. I used freshly roasted and ground peppercorns, which lends a more exotic flavour to the fry. You can follow the same method to prepare mushroom, paneer, potato, carrot, broccoli pepper fry too. Baby Corn Pepper Fry Recipe / Baby Corn Milagu Varuval is a very quick side dish or even name it as a starter, which can be done in flat 15 minutes and tastes very close to 5-star hotel dish.

Ingredients
  

  • 12 to 15 Baby Corn / பேபி கார்ன்
  • 1 Onion / பெரிய வெங்காயம்
  • 1 tsp Ginger Garlic Paste / இஞ்சி பூண்டு விழுது Link for Ginger Garlic Paste
  • 1/4 tsp Garam Masala Powder / கரம் மசாலா தூள் Link for Garam Masala Powder
  • 2 Pinch Turmeric Powder / மஞ்சள்தூள்
  • Salt / உப்பு As Required

To Roast & Grind / வறுத்து அரைக்க

  • 2 tsp Pepper Corns / மிளகு
  • 1/2 tsp Jeera / ஜீரகம்

To Temper / தாளிக்க

  • 2 tsp Oil / எண்ணெய்
  • 1/2 tsp Mustard Seeds / கடுகு
  • 1/4 tsp Jeera / ஜீரகம்
  • Few Curry Leaves / கருவேப்பில்லை

Instructions
 

  • First, measure and keep all the ingredients ready. Then, chop the onion, slit green chilli and baby corn in circles or lengthwise.
  • Heat a pan, then add peppercorns, cumin seeds and dry roast it till nice aroma wafts. Once it cools down, transfer it to a mixer.
  • Grind it little coarsely and keep aside. Heat oil in a pan, add mustard seeds, once it crackle, add jeera and curry leaves.
  • Now add onion, green chilli and saute till translucent. Then add ginger-garlic paste and saute for a while.
  • Add the baby corn, garam masala powder, turmeric powder and required salt.
  • Sprinkle very little water and mix well. Cook for 5 to 6 minutes in low flame, till the baby corn, turns soft but not mushy. Now add the ground pepper powder.
  • Mix again and cook for another 2 minutes, so the flavour of the pepper powder gets infused in the baby corn well. Finally, garnish with coriander leaves.
  • Serve this Baby Corn Milagu Varuval with Hakka Noodles.

Tips for Baby Corn Pepper Fry Recipe

  1. I sliced the baby corn in circles, you can even slice it lengthwise for a different look.
  2. To quicken the process, you can pressure cook the baby corn for 1 whistle.
  3.  I used cumin seeds/jeera for both roasting and tempering, it can be replaced with fennel seeds/saunf too.
  4. For a different taste and to yield more quantity, you can use 1 small bell pepper/capsicum.
  5. To enhance the flavour, 2  crushed garlic flakes can be used for this Baby Corn Milagu Varuval.
  6. Use curry leaves generously which lends an excellent aroma.
  7. For a simple version, readymade pepper powder and cumin powder can be used for this Baby Corn Pepper Fry Recipe.
  8. To get a tangy taste, 1 tbsp of tomato sauce/ketchup or lemon juice can be added at last.
  9. The same method can be used to prepare, mushroom, cauliflower, potato, carrot, brocolli, paneer etc.
