This Vegetable Fried Rice / Chinese Veg Fried Rice is the most popular and common Indo Chinese Recipe found everywhere as fast food also. Olive oil, MonoSodiumGultamate/Ajinimoto and shredded cabbage lends a great flavour to the Vegetable Fried Rice. But never add Ajinimoto (due to its side effects) which is the main ingredient in the Chinese cuisine. If you have chopped veggies and any left over rice, this recipe can be prepared within 10 minutes.

Vegetable Fried Rice | Chinese Veg Fried Rice

Preparation + Cook Time: 45 minutes  |  Serves : 2

Ingredients
  • Basmati Rice – ½ cup
  • Carrot – 1 small
  • Beans – 5 to 6
  • Capsicum – 2 tblsp
  • Cabbage – ¼ cup
  • Spring Onion – 5 to 6 sprigs
  • Soya sauce – ¾ tsp
  • Pepper powder – 1 tsp
  • Ajinomoto – ¼ tsp (optional)
  • Olive Oil – 2 tblsp
  • Salt – As Needed
Instructions

1. Rinse and soak basmati rice in water for 15 minutes. Pressure rice for 3 whistles with little salt and oil, rice and water ratio is 1 : 1.5 cups. Spread it in a plate, let it cool down.

2. Chop white and green parts of spring onions separately. Also chop all the veggies and keep by side. Heat oil in a pan and add white part of spring onion and saute for a while.

3. Then add carrot, beans, cabbage and capsicum one by one and fry for a while.

4. Then add pepper powder, soya sauce, green part of spring onion, salt and give a quick stir. Do everything in high flame to get a smoky flavour.

5. Finally add the cooked rice, and mix well without breaking the rice. Switch off flame.

Serve it hot with any Manchurian as side dish.

Tips

1. Always cool the rice before mixing and fluff the rice with a fork to separate the grains.
2. Also add olive oil generously and don’t skip spring onions which gives original Chinese flavour to the Vegetable Fried Rice.
3. You can replace olive oil with sesame oil or any sunflower oil.
4. Adding ajinomoto gives a restaurant touch to the fried rice, but always skip it due to ill effects of ajinomoto.
