Brinji Rice Recipe / Bay Leaf Pulao is a kind of variety rice or vegetable pulao popular in Tamil Nadu. This Vegetable Brinji Sadham is served in hotels and marriages. This is a one pot meal, loaded with veggies and filled with flavors, with a mild taste of coconut milk. It tastes  awesome with spicy kurma or any raithas.

Brinji Rice Recipe | Bay Leaf Pulao | Vegetable Brinji Sadham

Preparation + Cook Time : 45 Mins | Serves : 2 to 3

  • Basmati Rice – 1 cup
  • Big Onion – 1
  • Beans – 10
  • Carrot – 1
  • Green peas – 1/2 fistful
  • Green Chilli – 3 to 4
  • Mint Leaves – 1 fist full
  • Ginger Garlic paste – 1 tsp
  • Coconut milk – 2 cups
  • Salt – To Taste
  • Ghee or Oil – 2 tbsp
To Temper
  • Fennel seeds – 1 tsp
  • Bay leaf – 1 big
  • Elaichi – 2
  • Cloves – 2
  • Cinnamon – 1
  • Star anise – 1
1. Wash and soak basmati rice in water for 30minutes. Drain water. Chop the veggies, clean mint leaves, extract coconut milk and keep it aside.

2. Heat ghee in a pan and temper the items given under the table ‘To temper’. Saute for a while until the spices wafts nice smell.

3.  Add onions, ginger garlic paste, green chilli, veggies, mint leaves and saute well.

4. Now add basmati rice, coconut milk and season with required salt. Mix well. Transfer the rice to a pressure cooker, and cook in low flame for 3 whistles.

Fluff up the rice with a fork. Garnish with mint leaves and cashews fried in ghee.

Serve it with some spicy kurma or any raithas.

1. Use  coconut milk only, instead of water which gives a nice flavour.
2. Veggies choice is purely optional for Brinji Rice.
3. Use ghee only, for tempering to get a rich taste.
